First post

This will be my first post. I choose In the Kitchen because in my house this is the place where family and friends comes together. It is the heart beat of the house. I plan to post recipes, (how they turned out) ways to clean items and the general kitchen chit chat.
I would love to have any ideas that I can try and post the results.

  1. I would love some new chicken recipes. I am going on a diet and I cant have any oils, dressings, butter. All I can use is spices and either bake or broil...I will be waiting.

  2. Well I guess there is a reason why DIET is a 4 letter word.
Here is a great recipe that I used before my gastric bypass.
    Sauteed chicken and caramelized onions.
Cut an onion into wedges(about 6 pieces)
sprinkle 4 boneless, skinless chicken breast with salt and pepper. spray a skillet with non-stick spray. saute chicken till brown on each side, transfer to plate.
reduce heat. respray pan with butter flavored non-stick spray add onions, 1 tbsp. of sugar and salt and pepper(to taste) saute till onions are brown and caramelized.break the onions apart as they cook. when caramelized, add 1/3 cup reduced-sodium chicken broth. boil until it evaporates. Stir in 1 tsp. of rosemary, thyme and 1 more tbsp. of sugar. return chicken to skillet and sprinkle with 1 tbsp. of red wine vinegar. Cook, uncovered, until chicken juices run clear.
this is a good dish to have with yellow squash.
hope you like this let me know.

  3. I have a glass top stove and am told that I can only use specific glass top cleaners that are really expansive and you receive a small amount. I was wondering if you have any information on a less expansive product or way to clean. It would be greatly appreciated.

  4. Glass top stoves are extremely difficult to clean. There is a great inexpensive product that is safe to use.
    Bar Keepers Friend
this is a cleanser safe for glass cook top stoves and usually cost around $1.50 to $2.00 for 12 oz.
You can use this with a scouring pad.

  5. This is great Kel. I look forward to following along. I do most of the cooking in our house. Ar you interested in recipes from your readers? I have a few I would love to offer. A few that my Mom gave me, that has been passed down through the years. You know, what would be cool is to hear the stories that was passed down with the recipe. Doesn't every recipe have a story, a history or memoriable moments?

  7. Bill,
that a great idea i would love recipes and from readers and everyone does have a story. I posted the snow ice cream recipe and Melena sent me a message saying that brought back memories of living in Ohio.
The story behind that was, when the snow was up to your roof top cause the wind blew and drifted all night long, You had to dig your way out of you house. There would be a rare occasion when school was canceled. Mom would send us kids out to gather snow for ice cream. What a treat.
As far as the cookbook not sure if I'm quit ready for that yet. Still trying to figure out the blogging thing.

psss I have a question u may know if you have a bread machine. If I substitute regular flour when a recipe calls for bread flour will it ruin the loaf?
    Thanks so much, Theresa

  9. U-scrap it--
you can use regular flour in your bread machine, however you want a high protein content.
When I had my bread machine I would use King Arthur unbleached flour. It is high in gluten.
    Happy bread baking.
